My whole family love these! It’s very rare for there to be any left over in our house.. But, if and when I manage to save a few, they make a great next day lunchbox food! Perfect cold, broken up and added to a salad or reheated and enjoyed as is.
What I love about these patties the most is that anything works! I have added different vegetables from left over dinners, tuna, shredded chicken, bacon and even lentils! They are literally fool proof! You can't muck these ones up.
This is easy, simple and affordable cooking at it's very best!
Salmon Patties.
Patty Ingredients:
1 kilo of pre cooked sweet potato (or other starchy vegetable and make sure to leave the skin on for ease, increase in fibre, texture and for more nutrition!)
2 x 415g tins of Red Salmon or Tuna. (Brine removed)
1 grated Zucchini.
2 cups of spinach leaves.
1 finely diced Onion.
1 cup of chopped Coriander. (Or Parsley)
3 eggs.
Juice of one Lemon.
Crumbing mix:
1 cup of Oat Flour. ( you can make this yourself easily by blitzing rolled oats in your Thermomix or Nutri bullet or blender. Any other flour substitute will do the trick too!)
1/2 cup toasted Sesame Seeds.
1 Tablespoon of Sweet Paprika.
Pinch of Chilli Flakes (Optional)
Directions:
Preheat oven to 180dg and line an oven tray with baking paper.
Mix all of the patty ingredients together. I like to mash mine together well but still leave so texturual chucks of salmon and veggies.
This mix will make around 12 large patties. Press each patty into crumb mix whilst moulding the shape. Place onto baking tray and into preheated oven and bake for 25-30 or until brown and crisp on outside.
