OMG are you serious!? Peanut Choc Chip Chickpea biscuits!

My family ate these biscuits so quickly, I made another batch an hour or so after the first! They also failed to sniff and pick out my secret ingredient and were seriously shocked to find out they were made on tinned chickpeas! It is always exciting when I find new inspiration and can create nutritious, easy and affordable recipes like these. These have been on repeat here for a few weeks now. The kids can't get enough! Seriously give these ones a go. I haven't had anyone turn down a second.

Peanut Choc-Chip Chickpea biscuits!

  • 2 tins of chickpeas

  • 1 cup of peanut butter

  • 1 tablespoon of cacao powder

  • 1/2 cup of quinoa flour

  • 1/2 cup of maple syrup

  • 2 teaspoons of baking powder

  • Quality dark chocolate chips to top

  1. Pre heat oven to 180dg.

  2. Line with baking paper a large flat baking tray.

  3. Completely drain and thoroughly rinse your tinned chickpeas.

  4. Add all ingredients (minus the choc chips) and blitz until a sticky cookie dough forms.

  5. Use a wet tablespoon to scoop and gentle place dough onto lined biscuit baking tray. using a wet fork press cookies down slightly to create the biscuit shape.

  6. Add choc chips to the top.

  7. Bake in the oven for 20 minutes.

Like most of my cooking and recipes, this one is adaptable. I continually change things up and add different ingredients I have on hand. In the picture below I added half a cup of cacao powder in order to get more of a double choc taste, I also hand mixed through the choc chips at the end, creating more texture to the biscuits. Have a play around if you wish, you could also add nuts or seeds to the top too! And make sure to let me know how you go!
