I've made many variations of whole food, nutritious, secret ingredient brownies in my day but seriously, this one takes the cake! You will not make another version again. This is now your go to brownie recipe.
First things first, pre cook some sweet potato now! This recipe calls for cooked and cooled sweet potato. Of course, I didn't peel them either... Go chuck them in a pot to boil now... skin and all. There's no time to waste... You are going to love these!
The higher the quality of the ingredients you choose will inevitably create a higher quality taste for these. Choose a good quality dark chocolate. Take the time to source some from your local heath food shop. I love to use the 'Organic Times' brand as it contains no vegetable oil compound and has a rich gooey taste and texture when melted. If I can't source a quality chocolate chip, I like to use a Lindt 70% dark chocolate block found in any good supermarket and chop it myself.
Sweet Potato Brownies.
Ingredients
2 cup of cooked cooled sweet potato, skin on is fine!
1 cup of maple syrup.
1 cup of almond butter.
2 tsp vanilla extract.
1 cup of cacao powder.
1 cup of oat flour or GF flour.
pinch of salt.
1 cup of chopped walnuts.
1/2 - 1 cup of quality dark chocolate chips.
Preheat oven to 170dg and line a slice tray with parchment paper.
In a large bowl, mash cooled sweet potato and add the almond butter. Using a fork mash and fold the nut butter through the sweet potato mash until combined. Then add your remaining ingredients and fold through.
Cook for 35-40 mins or until golden and a knife test returns clean.
Cool in the pan for at least 20 minutes before slicing up. You can serve these warm with strawberries or cool with a dollop of greek yoghurt on the side. Both ways are delicious and nutritious.
These are a win win win situation!
