Crunchy Chocolate Slice

This is my take on the old school lunchbox weetbix slice.


I've used gluten free weetbix for the base ingredient of this slice as its an easy and effective way to add sorghum (a naturally gluten free grain) in for extra protein, nutrition and crunch!


It is also a great way to get young kids involved in the kitchen as crunching weetbix between your fingers is the best! Just ask my little mate Charlie, pictured below.


Originally, this was a fluke recipe thrown together over a cup of tea and chat with a client of mine. We used what we had and managed to come up with something nutritious and absolutely delicious that all of her children loved. So, of course it was worth a recipe.




Crunchy Chocolate Slice.


Ingredients

  • 5 gluten free weetbix.

  • 3/4 cup of coconut sugar.

  • 1/2 cup of shredded coconut.

  • 1 cup of plain flour, I used quinoa.

  • 1 teaspoon pure vanilla extract.

  • 2 tablespoons of cacao.

  • 1/4 cup of sunflower seeds

  • 200g of melted butter.

  • 1 tbs maple syrup.

  • Dark chocolate for topping,



Directions

  1. Crunch between your fingers the weetbix into a large mixing bowl.

  2. Add all other dry ingredients to the bowl and stir until well combined.

  3. Melt the butter and maple syrup along with vanilla and add this wet mix into the dry ingredients.

  4. When the mix resembles moist crumbs, add into a lined baking tray.

  5. Pat this down using the back of a wooden spoon or the base of a glass jar.

  6. Bake in a 180dg oven for around 15-20 minutes.

  7. Remove from oven and pre cut the warm slice.

  8. Add melted dark chocolate to the top and once cooled refrigerate to set.
